Urban Tree Cidery gears up to go even bigger
Tim Resuta is busy tasting his newest hard apple cider. Yeah, it’s a tough job. He expects his blood orange-bourbon-and-vanilla blend to reach peak in mid-January. “It’s up to the apples and how long it takes to pull the toffee, caramel and bourbon flavors from the barrels,” says Resuta, a dentist by day and a certified North American Cider Maker after hours. Inspired by an advance taste of ASW Distillery’s Fiddler Bourbon, he persuaded ASW to loan him the barrels for a new winter blend.
Tim and Maria Resuta began looking to start a second chapter in their lives about 10 years ago. With a passion for cider, they formed a joint venture with the Cathey Family Orchard in Mountain City, Georgia. They trained at the Cider and Perry Academy in Gloucestershire, England, to become certified in the pulping, blending, aging, infusing and carbonating process of making the gluten-free brew. In 2016, Urban Tree Cidery was born. Having already won awards, they’re looking at a second orchard, with the aim of creating a cider legacy.
“Atlanta has plenty of craft beer breweries, but the city needs other options,” he says.
